PIGEON PEA (ARHAR DAL / TOOR DAL)
Embedded with various health secrets, Yellow Pigeon Peas are food and cover crops. Combined with cereals, pigeon peas make for a well-balanced diet. Many different names across India know it. While in northern states, it is called Arhar Dal, the southern Indian people know it as Toor Dal.
This nutty and mild-flavoured dal should be soaked in water for 10 minutes before cooking. You can pressure-cook this delicious dal and add some finely chopped onions, ginger, and turmeric for that final touch of perfection. It can also be used to make wholesome khichdi; in South India, it is parboiled and used in salads with other vegetables like carrots, beans, and beetroot.
